4 medium beets -scrubbed, trimmed and cut in half
1/3 cup chopped walnuts
1 (10 ounce) package mixed baby salad greens
1 head of romaine lettuce
2 ounces goat cheese
1/4 cup balsamic vinegar
1/2 cup extra virgin olive oil
Cook the beets in water for 30 minutes or until tender. Drain and cool then cut into cubes. Chop the lettuce and mix together with the mixed greens, beets, watnuts and goat cheese. Make the dressing in a saparate bowl. Wisk together the balsamic vinegar, extra virgin olive oil and a dash of sea salt. Mix into salad and serve.
